Summer season is here and the transition from Winter to Summer is taking it’s toll, Dry skin, Parched lips, Cracked heels are no longer just associated with Winter’s but during the transition season we find ourselves struggling to cope with the same issues mixed with fatigue and dehydration too😒
In summers loss of appetite Or craving to eat cold food or something tangy and sour is not uncommon. So I hope you will love this recipe.
The original recipe Is by Mayuri Bhargava,I read it in INDIA TODAY’S newspaper edition 😀 And instantly found it interesting so sharing here my version of it.

COURSE : VEGETARIAN MEALS.(Snacks, Brunch)
CUISINE : INDIAN EASY RECIPES
PREP TIME : 15 MINUTES.
COOK TIME : 15 MINUTES
TOTAL TIME : 30 MINUTES
SERVING : 7 PEOPLE

INGREDIENTS : (Makes15 to 20 Mini size kebabs for a light evening snack or light brunch )
- Yogurt : 2 cups,(Hung for an hour to remove any excess water.)
- Bread slices : 4 ( dipped in water and squeezed well)
- Paneer : 100 grams grated.
- Potato : 1 boiled and mashed.
- Coriander leaves : 1/4 th cup finely chopped.
- Mint leaves : 4 to 5 twigs made into fine paste.
- Chat masala : 1 TSP (Easily available in all Indian Grocery stores)
- Red chili powder : 1TSP (teaspoon)
- Coriander powder : 1/2tsp.
- Mango powder :1/2 TSP
- Salt : To taste
- Gram flour : 1 TBSP (tablespoon)
- Grated Cheese : 1/2cup.
- Bread Crumbs : 2 TBSP for coating. (Crushed)
- Corn flour : 1TBSP ( mixed with water to make a runny batter)
- Oil : 2 to 3 TBSP (For shallow frying)(You can deep fry too as per your choice)
- Coriander powder : 1TSP
PREPARATION :
- In a bowl mix the above ingredients, combine the yogurt, Paneer,Potatoes Coriander leaves, Mint leaves, spices salt, Bengal gram flour (Besan ),Cheese and the bread crumbs. Adjust the seasoning as per your taste and likening.
- You can shape the Kebabs according to your choice, either round balls or in cylindrical shape.
- Now dip these balls in the runny cornflour batter you had earlier prepared and had kept aside.Now roll them in the bread crumb powder.
- Gently remove the excess bread crumb crush and deep fry or shallow fry as per your choice till golden brown.
- Remove the Kebabs on absorbent tissue paper or kitchen towel and serve hot, nice and crispy with chutney of your choice (my tip : try coriander or mint chutney )

TIP FOR THE DAY :
Mayuri Bhargava says the yogurt water which we drain should not be thrown away. Apply it on the roots and complete length of your hair,leave for 1/2 an hour and then shampoo for beautiful, silky,soft tresses.
