With the advent of summer season comes the necessity of keeping yourself hydrated, all of us drink coconut water,it’s the easiest source of electrolytes and available fresh and cheap compared to the so called expensive health drinks.

India is blessed with loads of natural resources and today’s recipe is from “God’s Own Country-Kerala” Coconut is found in abundance, so it’s no wonder that the sweet dish will not have Coconut 😅

Today’s recipe is so super easy,simple and quick to make, that you will keep making this pudding long after the summer season is over.

TOTAL TIME :15 TO 20 MINUTES.

SERVING :2 TO 4 PEOPLE.

LEVEL OF COOKING: SUPER EASY

INGREDIENTS:

  • Tender Coconut : 2 (For nearly 2 cup of Coconut water)
  • Cornstarch : 3 TBSP (tablespoon)
  • Condensed milk : 1 Can.or 1/4th cup according to the desired sweetness.
  • Coconut flesh : Of 1 Coconut cut into thin strips or pieces for garnish.
  • Dry fruit powder : 2 TBSP (if using homemade, Grind coarsely)

PREPARATION:

  • Pour the coconut water of 2 coconuts into one pot.
  • Remove half cup of water aside,heat it to lukewarm temperature, add the cornstarch to it and dissolve it completely, stirring frequently to see no lumps are formed.
  • Now add the cornstarch slurry syrup to the coconut water in the pot,in the same pot add the 1/4th cup of condensed milk.(Remember if the quantity of the coconut water is more,add more of the condensed milk ,stir and add the vanilla essence.
  • Now,heat this mix on slow heat for all the lumps to disappear and for the pudding to come to right consistency,seive it well to remove any lumps,skim of any bubbles with the help of the strainer.
  • Now divide the pudding into 6 to 7 equal jars or glass bowls,keep it uncovered for one hour and 4 hours add the lids and allow the mix to chill
  • Before serving garnish with the dry fruit powder and strips of tender coconut flesh.Your 😋 amazing, tasty Coconut jelly pudding is ready to eat.
  • Serve this amazing, easy to make delicious dessert and get accolades for making something special 😀
  • (For health conscious people, you can use honey and coconut milk to replace condensed milk, obviously their might be a slight change in the original taste)
