While we were working in Pune,we had a favorite place to hang out on weekends “Baghban” The speciality of this place was it’s sitting style on Kashmiri rugs with a table in the center. You had to sit down to eat and were provided comfortable cushions for your support. The food, the ambience still makes me nostalgic 😢

Bhuna keema.

There was this very unique, amazing recipe made with minced meat”Bhuna keema” we used to love eating it with rumali roti. I have adopted today’s recipe from those memories. Hope you will enjoy this recipe as much as I do. The Basic idea is to find joy in the little things which remind you that those little things matter,in the long run. Have fun .

  • Ingredients:
  • Minced meat : 500 grams.
  • Wet masala  :Paste of  [ 1 tablespoon fresh coconut grind +1 teaspoon Ginger garlic paste +1 tablespoon fried onion]
  • Curd : 2 to 3 tablespoon fresh [stir nicely to make it smooth]
  • Capsicum  : 1 slit into long pieces
  • Onion shallots  : 3 slit in between
  • Green chilies  : 3 to 4 slit in between.
  • Tomato  : 1 cut into circular discs
  • Onion  : 1 to 2 [Fried Golden brown]
  • Whole spices: Bayleaf : 1 to 2
  • Black cardamom: 1 to 2
  • Small Green cardamom  : 1 to 2
  • Powdered spices:
  • Red chilli powder: [Kashmiri ] : 1 to 2 tablespoon
  • Turmeric  : 1/4th teaspoon
  • Garam masala powder : 1 to 2 teaspoon
  • Black Pepper powder: 1/4 th teaspoon
  • Coriander +cumin  powder : 1 teaspoon
  • Oil : 2 to 3 tablespoon [ If using  Ghee or Butter,adjust  accordingly]
  • Kasuri methi : 1 teaspoon [ roasted and crushed]
  • METHOD  : Step 1 : Preprep :-
  • Clean and Steam the meat,add little salt ,Turmeric and coriander. Separate the broth.
  • Step 2 :
  • Heat the pan, add oil or Ghee mix,once hot,add capsicum, green chilies and whole spices.
  • When they start crackling, add the dry meat,Pepper powder, and all the powdered spices,give a nice mix.
  • Also add the masala paste and curd,stir nicely, add little stock and cover and cook.
  • At this stage, I also add premix of vegetables [Don’t leave any chances to introduce  vegetables 😆]This step is optional [How to make premix⬇️ shared the link below.

  • Open the lid,check the doneness, if you find oil separating, add the golden fried onions and crushed kasuri methi stir,cover and cook for 2 to 3 minutes.
  • Add Coriander and milk cream and your dish is ready to serve.

Bhuna Keema is a well known Indian cuisine, it’s sister versions are found across the neighboring countries too. It is very flavourful, healthy and tasty. Full of spices and aromatics. Sometimes it’s made using minced meat directly added to the spices also. And cooked till the meat is tender. Usually made from from lamb meat.

Ingredients

  • Keema (minced meat) : 500 grams.

  • Eggs : 3 ( Boiled)

  • Curd : 2 to 3 tablespoon ( Fresh,do not use sour tasting old curd)

  • Onion shallots : 3 long and slit in between.

  • Capsicum Capsicum : 2 Rough long,thinly sliced

  • Green chilies : 3 to 4, slit in between.

  • Tomato : 1 big or 2 small cut into round, circular discs.

  • Onions : 2 medium ( Fried golden brown for garnishing)

  • Kasuri methi : 1 tablespoon lightly roasted and crushed for garnishing.

  • SPICES AND CONDIMENTS :
  • Garam masala : 1 to 2 teaspoon ( according to your taste)

  • Red chili powder : 2 to 3 teaspoon or the heat you require.

  • Salt : To taste.

  • Black pepper powder : 1/4th teaspoon.

  • Cumin-coriander powder : 1TSP

  • Turmeric : 1/4th teaspoon

  • PREMIX :
  • Premix of all the vegetables: 2 to 3 tablespoons [Have shared how to make the premises in the earlier blog of meal-prep.]

  • WHOLE SPICES :
  • Black masala cardamom big : 2

  • Green cardamom : 1 or 2

  • Bay-leaf : 1

  • Black pepper whole : 3 to 4

Directions

  • In a pan or tawa, add oil.lower the flame, let it heat,when the steam starts rising up add 1 tablespoon vegetable oil or 1 tablespoon ghee + 1 teaspoon oil. Let it become warm,then add the whole spices.
  • Once the whole spices start to crackle,add green chilies, roughly diced capsicum, tomatoes,once they are stir fried for 1 to 2 minutes, add the paste of roasted masalas and golden fried onions [2 to 3 tablespoons. ]
  • Add the minced meat, stir it in the masala well,add half a cup of the broth,cover for 5 to 10 minutes till it’s infused in the flavors.
  • Now,add all the dry powders like pepper, garam masala, red chili powder, cumin and coriander powder mix and 1 to 2 tablespoon of nicely whisked fresh curd. Stir well and add salt,cover and cook for 7 to 8 minutes on sim mode [ As by this time water has nearly dried out and oil from the fat has started to ooze]
  • Last step : Open the lid,garnish with more golden fried onions, crushed Kasuri methi,stir,you can cover the lid for 2 to 3 minutes or just like that stir and cook,close the flame, Garnish with freshly cut cilantro .
  • Serve hot with your favorite accompaniment like rice, roti,Naan and Raita.

Notes

  • Boil the minced meat and separate the broth, add it according to the dry or wet consistency you want the Keema to be.
  • Make a paste of masala = 2 tablespoon fried onions + 1 and 1/2 teaspoon red chili powder + 1 teaspoon of ginger garlic paste + 1 tablespoon of dried coconut grind ( that is optional)
  • I have added 2 to 3 tablespoon of vegetable premix [ Finely chopped cabbage +carrots + red pepper + capsicum] It is optional, you can skip that step,[ I always take advantage of such recipes to secretly push in the veggies 😅😉] How to create premix, I have already shared in my meal prep blog.
