It has been a fantastic year for some, a roller-coaster for some. I heard this story from my spouse and I genuinely think it is perfect for this last blog of 2024.

The story goes like this, A young lad falls in love with the village chief’s daughter. The village chief knows the boy well but for the sake of formality and to be very sure that he is choosing the right boy for his girl, he tells the boy that he will surely give his daughter’s hand in marriage to him but he has to pass a small test as a formality. He calls the boy next morning at his cow shed.

The boy was very confident about himself and had come dressed well as he knew this is just a formality and he was hundred percent marrying the girl. The chief met the boy at the gate and told the boy his task. He will be releasing 3 bulls,the boy has to catch the tail of any one of it,if he is able to do that,he is free to marry his daughter. The boy being confident agrees without second thoughts.

The gate opens and the first Bull comes out,He is running at top speed, has red fire filled eyes, is strong, tough and looks as if he is ready to trample the boy. The boy is scared to his wits,he thinks in his mind if I am alive,I will have the chance to marry,I will let this bull go,will catch the tail of the next one.

The first one goes and the second bull comes out,this one is more ferocious, more strong again the same story repeats The boy let’s this bull go,promising himself that he is not going to let his last chance go. When the last Bull came out,the boy was laughing his heart out,because the last bull was old,frail, weak and was not even able to walk properly, forget about running. The boy got impatient ,he couldn’t wait for the bull to come towards him and ran to catch the tail of this bull. Alas, the last bull Had” No Tail”

Moral of the story “Opportunity is disguised as Problem.” Last year is already gone and so with it the time to rectify the past and gone mistakes. The new year 2025 is upon us with brand new 365 Opportunities. Look at the Future with Hope.

Sink your teeth into the sweetness of this classic carrot cake to satisfy your cravings and this recipe will make you fall in love with it’s flavourful taste. This dessert which originated in Europe and which has made itself a world wide favorite with all it’s avatars with various regional tastes and adaptations will win your heart.

Ingredients

  • All purpose flour : 250 grams

  • Granulated sugar : 200 grams.( I like my cake on the sweeter side so I use 220 grams of sugar, you can adjust the sweetness according to your preference)

  • Unsalted butter : 100 grams at room temperature, softened.

  • Eggs : 4 large at room temperature.

  • Baking powder : 1TSP (teaspoon)

  • Carrots : 1 and 1/2 to 2 ( finely grated or chopped, otherwise it won’t bake evenly and you might find it chewy)

  • Fruits or dry fruits : 1 cup of your choice. ( 1cup = 16 tablespoon or 120 to 140 grams,depending on weight of the cup and the Ingredients. )

  • Vanilla extract : 1TSP

  • Nutmeg powder : 1/2teaspoon

Directions

  • Pre-heat the oven to 180°C (350°F) For 2 minutes. Grease the cake pan,if you are going to use 2 pans distribute the dough equally, do not forget to line it up with parchment paper.
  • In a medium bowl whisk together all the dry ingredients (Flour,baking powder,nutmeg powder, salt(you can add a pinch or 1/8th teaspoon)
  • In a large bowl with the help of electric mixie or blender, beat the sugar and butter until light and fluffy,incorporate the eggs one at a time though the process looks time consuming it makes the batter light. Ingredients  for carrot cake recipe.
  • Now,slowly add the dry mix to the wet ingredients on low speed or if you are using the spatula,use the cut and fold method.
  • Add the grated carrots, chopped nuts if you are using any,give a last mix(do not over beat the batter or the cake may turn dense)
  • If you are using two pans divide the batter equally, (I have used one,because we do not add frosting to the cake)
  • Back for 30 to 35 minutes or till the toothpick comes out clean, allow the cake or cakes to cool downCarrot cake. Easy,simple,tasty and moist.
  • You can enjoy plain,moist carrot cake or you can make it a layered cake with frosting.

Notes

  • Cream cheese frosting : 100 grams cheese softened to room temperature, 50 to 60 grams of unsalted butter,200 grams powdered sugar and a teaspoon of vanilla extract (these are rough about measurements as I avoid frosting as it is not so much liked in my home- courtesy-meta)
  • The oven temperature for a regular oven and microwave vary,check the cake in between, if you find the cake drying out, add simple syrup later,when the cake cools
  • For beginners, do not worry it’s a learning curve and experience, I have made my shares of mistakes too. Happy baking
