Burned toast & Eggs? 🤔 honestly we die out of options, and redo the same breakfast recipes over and over again, no wonder we can’t finish through our breakfast. Especially as a working woman I honestly find it difficult to create something interesting in the rush of morning routine,feel caught up doing dosa,pohe,paratha and sandwiches but on a more relaxed day,I may make something unique and tasty.
Recently I found this interesting recipe and I gave a try and it turned out to be a great evening snack, my family loved it and demanded it for breakfast so the same recipe became breakfast 😋 So unique is this dish that you can use it for breakfast time,snacks or simply as a side dish. So should we begin.

- Ingredients:
- Thinly sliced carrots : 1 bowl
- Thinly sliced cucumber : 1 bowl
- Thinly sliced capsicum: (You can use mixed colors like yellow and red too) : 1 bowl
- Thinly sliced salami : (Optional) : 1 bowl
- Thinly sliced : cabbage : 1 bowl
- Thinly sliced onions: ( Optional) : 1bowl
- Cheese : 1 bowl grated( Permeson or cheddar or regular cheese your choice)
- Egg : 1 (optional for binding)
- Cornflour : 2to 3 tablespoon
- All purpose flour : 2 to 3 tablespoons (For mixing with cornflour)
- Salt : To taste
- Red chili powder or flakes : To taste
- Black pepper powder : To taste
- Olive oil : 1 teaspoon.
- Oil : 2 to 3 tablespoon for shallow frying.
- (You can use all the leftover veggies remained in your refrigerator,that way all your veggies get finished before you restock for the week)
- (Optional Veggies: You can add all types of green leafy Veggies too,I added a bowl of Spinach and coriander mixed)
- (Can add thinly sliced or grated avocado,mushrooms,zucchini.Be creative And your favorite vegetables can be your playground)
- PREPARATION :
- In a bowl,mix all of the above ingredients including olive oil.
- Add the cornflour, all purpose flour,mix and sprinkle some water,to bring all of the ingredients together (Instead of water,you can add an egg – But it will bring a change in the taste of originally veggie bite recipe)
- In a pan,heat oil,when you see the vapor rising, reduce the flame on medium.
- Now you can either roll the mix in round Croquettes( balls)or just spread it in a pan like pancakes or give it rectangular shape to make Veggie cake bites with the help of spatula
- Shallow fry on both sides,till golden brown and you are good to go,serve hot with your favorite dip or chutney.

kcalThese Emerald Croquettes or Veggie bites are a delight to eat,they not only showcase the beauty and versatility of these vegetables but the satisfying crunch makes them a good and irresistible side dish, appetizer, breakfast dish or tasty evening snack.
Ingredients
Grated carrot : 1 bowl
Grated Paneer : 1 bowl( Can be interchanged with Tofu)
Grated cucumber : 1 bowl
Thinly sliced cabbage : 1 bowl
Thinly sliced onions: 1 bowl
Thinly sliced Capsicum : 1 bowl ( you can mix yellow and red Capsicum, instead of green)
Thinly sliced or grated : Cheese ( Any Cheese of your choice – I use mozzarella or parmesan) – 1 bowl.
Cornflour: 2 to 3 tablespoon mixed with 2 tablespoon of all purpose flour
Eggs: 1 for binding slurry (Optional)
Salt : To taste
Red chili powder : To taste
Black pepper powder : 1 and 1/2 pinch
Olive oil : 1 tablespoon.
Vegetable oil : 2 to 3 tablespoon for shallow frying.
( Optional veggies : You can add all types of leafy green veggies according to what you have or is available, you can also use the leftover vegetables in your refrigerator in this recipe, it avoids wastage also this way,your fridge becomes free to restock) – 1 bowl.
(Can add thinly sliced or grated mushrooms, avocado, zuccini Tofu or any protein ingredient of your choice to the above mix- I use thinly sliced chicken salami.)
Thinly sliced chicken salami: 1 bowl.
Directions
- In a big bowl mix all the above ingredients, all the thinly sliced vegetables along with olive oil and the spices.
- Next add the cornflour and all purpose flour mix, salt to taste and sprinkle some water,to bind all the ingredients together. (Instead of water,you can use egg to be the binding agent)Keep the mix bit runny makes it easy to spread,if making Croquettes Keep it thick.
- In a pan,heat oil, when you see the vapor rising,reduce the flame to medium
- Now you can either roll the mix in round Croquettes or just spread it in the pan like pancakes or make rectangular veggie bites with the help of spatula
- Shallow fry on both sides,till golden brown and you are good to go,pair it up with your favorite dip or sauce.
Notes
- For keeping the Veggie bites simple,skip adding eggs or salami.
- You can use gram flour, rice flour or all purpose flour instead of cornflour
- You can add soya flour too to give the protein element instead of egg and salami.
- If using eggs, do not use gram flour, it alters the taste making it taste more like a patty.
- If using airfryer keep temperature at 375°F(190°), cooking time 5 to 7 minutes, changing the sides halfway through for crispy tender exterior and soft interior with minimum usage of oil.
- If using microwave 30 to 60 seconds on each side depending on the size of your Veggie bites and microwave’s power level
- Some important tips,while using air fry or micro,pat dry the Veggie bites, use small amount of oil to brush or spray on both the sides.
- Each method will vary the taste,to ensure you have the most out of this dish,my suggestion Shallow fry, use vegetable oil in minimum quantity if oil consumption is an issue. 😉
- If you prefer to keep the veggie bites or croquettes simple,do not add Eggs or salami
- For the binding agent you can use gram flour too as an option and sprinkle water Do not use egg,it doesn’t go well with gram flour for this recipe, making it taste more like a vegetable patty)
