Some years back, while I and my better half  were working in Pune for a private institute, I received a call for a home tutor. I went to meet the person who was from Sudan,though not a Sudanese himself. I thought as the person had called and approached an English institute, it had  to do with communication skills, but to my big surprise, he said it’s going to be a long stint here in Pune and for daily mundane chores I need to speak Hindi.

He just wanted a Hindi tutor,I said you called the wrong place, the person said Mam can you speak Hindi, I said sure I  do,he said that is enough, I am not interested in learning grammar. The next 4 months my classes continued,we spoke on various topics, He also was an accomplished musician, we used to have at least one session on music, bollywood 😀

He used to make a very good Persian Irani chai and was a good cook,I mean how many of us get students who will sing,play music and cook good food😂

To come to the point, today’s recipe has 3 different styles or versions, I  will be sharing 2 here,I learnt this recipe from my that student, long time ago. The one I usually make is on the heavier side and I make it on special occasions. The one’s I am sharing Here are the light or snacks version. I am not sure how much I succeeded as a Hindi tutor to him,I surely benefitted with many recipes instead.

This unique, flavor filled recipe which is Afghan style is full of aromatic, juicy taste,marinated in a blend of immensely flavor filled fresh herbs.

Ingredients

  • 300 to 400 grams : chicken (boneless & skinless )

  • Curd : 2 to 3 tablespoon.

  • Ginger-garlic paste : 1 tablespoon

  • Vegetable oil : 1 to 2 tablespoon

  • Pepper powder : 1 teaspoon freshly roasted and ground.

  • Salt : To taste.

  • Cumin powder : 1TSP ( Optional)

  • Coriander powder : 1 TSP (Optional )

  • Lemon juice : 2 tablespoons ( freshly squeezed )

  • Mix of cilantro and mint : 2 tablespoons

  • Either green chilies or red chili powder : According to your taste (Optional)

Directions

  • Wash the chicken and pat dry.
  • In a bowl, prepare the marinate by putting all the ingredients like cumin powder, coriander powder, chili powder or green chili paste, ginger-garlic paste, oil,curd ,salt,pepper etc.
  • Add the chicken to the above marination and keep it aside for 30 minutes minimum for the flavors to get infused.
  • Grill or cook the chicken in oil/ ghee or butter till thoroughly cooked
  • Add a generous amount of lemon juice, garnish with mint and cilantro.

Notes

  • Pro – tip : The original Recipe which I learnt only had chili powder, salt and pepper. So while preparing I have kept the other spices as optional according to your taste preferences.
  • This recipe is very easy to make, the only time it requires is actually to marinate, so my advice keep the chicken for marinate before hitting the gym,till the time you come back it will be ready to be cooked
  • You can always interchange the lean meat with mushrooms or Tofu or paneer.
  • Make the consistency of the gravy thick Or you can shallow fry it to,to create a healthy munchy.
  • AFGHANI-RAITA (SALAD IN YOGURT SAUCE) :
  • Ingredients :
  • Thinly cut lettuce,Spinach or arugula/kale : 2cups
  • Cucumber : 1 cup finely chopped
  • Tomatoes : 3/4th cup finely chopped
  • Red/ yellow pepper : 1/2cup : thinly sliced or finely chopped
  • Onions : 1/2 cup ( Optional)
  • Lemon juice : 1 and 1/2 table spoon
  • Salt : To taste
  • Black pepper powder : freshly ground : 1/4th teaspoon
  • Green chilies : 1 finely chopped ( Optional)
  • Olive oil : 1TBSP ( Optional)
  • Preparation:
  • In a very large bowl,combine all of the ingredients
  • Add lemon juice, salt ,olive oil and give it a good mix
  • Add your favorite cheese to increase the flavor profile like feta or ricotta
  • You can add or subtract the ingredients according to what you will love to have as a side dish with your Aghan – Chicken.
