Pepper Chicken is a flavorful and aromatic recipe which combines the aromatic spices of India with the juicy taste of Fresh Chicken. This dish is favorite among many because of it’s aromatic, spicy,savory content of Pepper, which is perfect for heat lovers. It’s an amazing recipe which can be enjoyed as a main course or paired with your favorite rice or bread to make it a complete meal or can be dry cooked as a starter recipe for your meal. Whether you are an accomplished cook or simply a beginner in the kitchen. Pepper Chicken is surely a dish to try out,it offers a satisfying culinary experience with its rich aromatic flavors.
My husband recently had been to a friend’s place, whose wife is an accomplished, amazing cook, he couldn’t stop raving about the dish,so I thought why not give it a shot. He had tasted the dry version but insisted that we try the gravy one as he already tried the dry version. So we made it in Gravy. You make this recipe the way you want Dry or Curry, you will not be disappointed by it’s flavourful taste, it’s a Goddam flavor Bomb 😜
KEY INGREDIENTS: To make Pepper Chicken, you will require the following ingredients.
- Chicken : Boneless or Bone-in-pieces, depending on your preference.
- Black pepper : Freshly ground for maximum flavor
- Onions : Thinly sliced for savory and sweet taste.
- Ginger garlic : Freshly minced to a depth of fragrance.
- Green chilies: To add extra element of heat,though it’s optional.
- Curry leaves or Bay leaves : Again optional, just to add more aroma and flavor.
- Spices : Cumin, Coriander and turmeric.
- Oil : For cooking purposes according to your preference but vegetable or coconut flavored preferred.
- Salt : According to your taste.
COOKING METHOD : The cooking process involves marinating the chicken in all the aromatics, then sautéing it with all the Green Herbs like onion, Ginger-garlic to prepare a very strong robust flavor profile. The adding of black pepper at the end enhances the dish’s signature profile. Simmering the chicken allows it to absorb all the flavor of all the aromatic added to the dish. The result is a Juicy ,Tender, Flavor filled Chicken.

minutesTender chicken made with the perfect blend and balanced well with black pepper, garlic and spices, served with Bell Peppers and other assortments of vegetables. This Asian Dish will warm your heart. Easy to make, Quick and delicious.
Ingredients
Chicken : 1 kg with bone-in-piece Or Boneless according to your preference.
Onion : Medium 4 Thinly slicedBay-leaf or Curry leaves : 3 to 5 Curry leaves Or 1,2 Bayleaves.
Bell Pepper : 5 to 6 medium sized cut into cube or bite-sized pieces.
Ginger garlic paste : 1 and 1/2teaspoon, Freshly minced to add more depth to the aroma.
Green chilies : 1 or 2 depending on the heat you require.
Cumin : Freshly grind : 1 Teaspoon.
Turmeric : 1/4th teaspoon.
Black pepper powder : 1/4th teaspoon.
Salt : According to your taste.
Oil : (You can use oil or Ghee) : 2 tablespoons .
Cashew : 9 to 10 whole grind and kept aside.
Sesame : 2 tablespoon.
Directions :
Step 1:
- Wash the chicken thoroughly and pat it dry. Keep aside.
- Let’s prepare the vegetables, Chop the vegetables into bite size pieces
- Marinate: This step is optional. In a bowl whisk the following together in yogurt -lemon juice, Cumin powder,black pepper powder, turmeric and salt. Add the chicken pieces to it and let it sit for half an hour minimum.
- In a grinder,make a paste of the following to add in the recipe later : Onion, cashew, ginger-garlic, sesame seeds, black pepper powder (Optional, as previously added to the marinate)
- Cut the remaining onions in long thin slices, (Long sliced onions bring natural sweetness to the Recipe )
- In a frying pan or wok add Oil OR Ghee, 2 to 3 Bay leaf, Add the thinly sliced onions followed by the vegetables (You can use cubes of carrots, different colored bell peppers to add color and variations or any other veggies of your choice) Add the marinated chicken now,adjust the consistency and the spices, depending on the heat you want.
- Add water and allow it to cook for 10 minutes for the flavors to burst more.
- After 10 minutes please add the white paste from the grinder and stir nicely.
- Adjust the salt,cook the chicken till it has turned brown from all sides and the excess water has evaporated and you get a nice gravy like consistency.
- Garnish with Basil OR Cilantro, serve hot with chapati, Naan or White Rice.
Notes
- Use any color Bell Peppers to bring variations and to uplift the dish with colors and flavors
- Add other veggies of your choice like Broccoli or snap-peas to the stir fry.
- You can also use Red chili powder OR Cayenne pepper to add more heat or spiciness to adjust to your flavor profile.
- You can add Oyster sauce at the end to enhance the flavor.
- Serve with Raita ( Indian Salad made with Yogurt, tomatoes, cucumber, onions, carrots and coriander. )
- Use bone – in – pieces if possible to add more flavor to the Recipe.
