[THE RECIPE I’M ABOUT TO SHARE HAS IT’S INSPO FROM CHAND & SUR ] I found this recipe very interesting and healthy.So I tried making it, and it turned out to be good,so I decided to go ahead and make it bit more festive by adding my touch to it This fusion was a perfect game changer to the original Recipe but a perfect one 😀 Hope you and your loved ones enjoy it.

  • Preparation time : 30 minutes
  • Cook time : 15 to 20 minutes
  • Total time including pre – prep : 45 to 50 minutes.
Shahi,kaala matar recipe made from black peas,Paneer and authentic spices and herbs.

INGREDIENTS :

  • Kaale matar ( Black peas ) : 250 grams soaked overnight, steam and keep aside in the morning (On medium flame, pressure cook for 10 minutes till you get 3 to 4 whistles. Close the flame,let the steam settle, drain and keep aside.Do not throw the water away.)
  • Paneer ( Fresh cottage cheese) : Equal to peas 150 to 200 grams.
  • Onions : 2 medium sized,finely chopped.
  • Green chilies : 2 to 3 slit in between ( According to your preference)
  • Coriander : 1/2 bowl : finely chopped,for garnishing.
  • Lime juice: 1 to 2 teaspoon.
Condiments for Shahi kaala  matar.
  • CONDIMENTS :
  • Whole red chilies : Dried 3 to 4
  • Bay-leaf : 1 to 2
  • Almonds : 5
  • Cinnamon stick : 1 to 2 ( 1 inch )
  • Star anise : 1
  • Black cardamom ( masala elaichi) : 1 to 2
  • Javitri : 1/2
  • Dhania powder (coriander powder) : 1/2 teaspoon.
  • Turmeric : 1 teaspoon
  • Sabzi masala ( Ready-made vegetable masala powder) : 1 to 2 teaspoon.
  • Oil/ Ghee/Butter : ( According to your preference: I have used ghee : 2 tablespoon.
  • Salt : To taste
  • Red chili flakes : For garnishing
Marinate and golden fry the paneer for Shahi kaala matar. Paneer takes the recipe to the next level.
  • PASTES :
  • Ginger paste : 1 teaspoon
  • Garlic paste : 1 teaspoon.
  • DAIRY :
  • Curd : 2 tablespoon.
  • Milk cream : Nicely whisked 1 bowl.
  • PRE- PREPARATION :
  • 1.Make the masala paste before hand : In a mixie jar add the almonds, ginger paste,garlic paste,salt,turmeric, chili powder, dhania powder, sabzi masala,little water and make a fine paste.
  • 2. If using packaged paneer,bring it to room temperature, cut into bite – sized pieces, coat with a mix of salt,turmeric, Kashmiri Red chili powder and curd. Marinate for 10 minutes and shallow fry on both sides and keep it ready.
  • 3. Drain and keep the black peas ready,(Do not throw the water away.)
  • METHOD :
  • Heat the pan on medium heat, Once the pan is hot,reduce the flame, add oil,and all the whole spices and the thinly cut onion. Let it become nice golden brown.
  • Once the onion is done and whole spices crackle, it’s time to add the masala paste which we previously made along with salt.
  • Once the masala is nicely roasted,and the oil starts separating add the previously steamed black peas,stir nicely till all the masala gets evenly coated.Now add the separated water which we had kept aside( Add little by little to allow the black peas to get cooked well in the spices. )[ cover and cook for around 10 minutes]
  • Once the peas are nicely cooked, add the Paneer, (we had already marinated and slightly toasted it already ) stir well, add the cream,Kasuri methi,cover and cook for 5 minutes more or until done.Check the balance of the spices,salt
  • Now,our Dish is ready,garnish it the way you like,with little cream,coriander,golden fried onions and serve hot with chapati,naan or roti.

Kaala matar recipe is full of nutrients and vital vitamins and supplements, it’s a powerhouse of health. This Recipe is a perfect balance of healthy recipe made with flavors of fresh herbs, cream and spices.

Ingredients

  • Kaala matar : 250 grams [ Soaked overnight and pressure cooked for 8 to 10 whistles. ]The peas should be soft enough to be mashed between your fingers.

  • Paneer [CottageCheese] : : 200 grams : If you are going to use,packaged paneer, bring it to room temperature, marinate with 1 tablespoon curd,chilie powder,salt,turmeric, 1 teaspoon of Ginger-garlic paste for 10 minutes, shallow fry on both the sides till golden brown and keep ready to use later in the dish.

  • Onions : 2 medium sized finely chopped or thinly sliced. Half of it fry till golden brown. [ Remaining half will be used at the time of preparing the Dish.]

  • Green chilies : 2 to 3 slit in between.

  • Coriander : 1/2 bowl finely chopped for garnishing.

  • Lime juice : 1 to 2 teaspoon.

  • CONDIMENTS :
  • Whole red chilies : Dried 3 to 4

  • Bay-leaf : 1 to 2 medium.

  • Almonds : 5

  • Cinnamon stick : 1 to 2 (1 inch )

  • Star Anise : 1

  • Black cardamom : [ Masala Elaichi ] : 1 to 2

  • Dhania powder : 1/2 teaspoon.

  • Turmeric : 1 teaspoon

  • Sabzi masala : [Ready-made vegetable spice powder : 1 to 2 teaspoon.

  • Oil/Clarified butter( ghee) /Butter : According to your preference ( I have used Ghee) 1 to 2 tablespoon.

  • Salt : To taste

  • Red chili flakes : 1 teaspoon for garnishing.

  • PASTES :
  • Ginger paste : 1 teaspoon

  • Garlic paste : 1 teaspoon

  • Masala paste : [In a mixie add the Almonds, 1 teaspoon garlic, 1 teaspoon ginger paste salt to taste,half of the fried onions little water and make a fine paste and keep it ready.

  • DAIRY :
  • Curd : 1 to 2 tablespoon.

  • Milk cream : 1 Bowl, nicely whisked.

Directions

  • Heat the pan on medium heat, lower the flame,add ghee/oil 1 tablespoon,once it’s hot,add the Green chilies,whole spices, after they start crackling, add the remaining thinly sliced onions, let it be golden brown in color
  • Once the onion and whole spices are well stirred and crackle,add the masala (curry-paste) which we had prepared earlier, once the Curry paste is nicely stirred and raw smell dissipates and oil starts to leave at the side,add the steamed black peas ( kaale matar)
  • Stir the black peas nicely with the roasted masala,add little of the drained water,which we had kept aside to get a smooth gravy like consistency [ Do not add the whole water together, keep on adding as required,stir,cover and cook for 10 minutes]
  • Check for the doneness of the peas by mashing it in between your fingers, if it easily gets mashed,it’s done,now add the stir fried Paneer which we had earlier marinated, fried and kept aside.Add paneer, 1 bowl of whisked cream,remaining curd,Kasuri methi, cover and cook for 5 more minutes.[ At this stage Check the balance of spices and salt- if you want it to be a bit sweet add a teaspoon of honey/ sugar.
  • Now,our Dish is nearly ready,[ This is an extra step – Add tempering of 2 red chilies, finely chopped garlic, crushed Kasuri methi on top with little coriander and the remaining fried onions. (I have added finely chopped onion shallots and greens. ) Add the lime juice in the end,check the balance.
  • Serve hot with Jeera-Rice (Indian style fried rice),Chapati, Naan or Roti.

Notes

  • Instead of Black peas,you can use black grams ( chaana) Both have the same character.
  • You can add Tofu,instead of Paneer to add more Protein element or even mushrooms.
  • I have added ready made sabzi masala ( You also can add your own variations)
